Sicily is the largest island in the Mediterranean Sea. Along with a few surrounding islands, it constitutes an autonomous region of Italy - and is the homeland of Italian Chef Paolo Gionfriddo. At the head of the kitchen brigade of Rosso, an Italian restaurant and lounge at Shangri-La Hotel, Jakarta he is painting the town red with flavors inspired by Sicily and beyond.
