COPA and Santanera Bali Bring the Spirit of Latin America to Jakarta Through an Exclusive Culinary Collaboration

This July, Jakarta's dining scene welcomes an exciting collaboration as COPA at 25hours Hotel Jakarta joins forces with Santanera Bali for a two-night gastronomic experience celebrating the vibrant flavours and traditions of Latin America. Taking place on 17–18 July 2026, the collaboration brings together two celebrated chefs whose culinary journeys have been shaped across continents before finding a home in Indonesia.

Leading the collaboration are Chef Matias Mardones of COPA and Chef Andrés Becerra of Santanera Bali. Hailing from Chile and Colombia respectively, both chefs have built international careers spanning cities including Hong Kong, Macau, Melbourne, Copenhagen, and Bali. Their shared passion for bold flavours, open-fire cooking, and heartfelt hospitality forms the foundation of a dining experience that is deeply rooted in Latin American heritage while embracing the richness of Indonesian ingredients.

At the heart of the collaboration is fire—a defining element of Latin American cuisine that symbolises warmth, togetherness, and craftsmanship. Throughout the specially curated menu, guests can expect dishes that showcase charcoal grilling, wood-fire cooking, fermentation, and vibrant native flavours, thoughtfully interpreted using locally sourced produce. Each plate tells a story of heritage, exploration, and the creative exchange between two kitchens united by a shared philosophy.

Among the highlights is the Scallop Toston, pairing delicate French scallops with the lively kick of Indonesian sambal hijau atop a traditional toston. The Torta Ahogada offers an inventive interpretation of the beloved Mexican "drowned sandwich", featuring house-baked potato bread, red snapper, pickled cabbage, and a rich prawn and habanero bisque. Completing the experience is the Wood-Fired Quail, where perfectly cooked quail is paired with mushrooms and black mole, showcasing the chefs' mastery of fire-based cooking.

More than simply a guest chef takeover, the collaboration is a celebration of shared values. "Both COPA and Santanera share a similar way of approaching food," says Chef Matias Mardones. "It's flavour-driven, relaxed, and built around bringing people together around the table." That philosophy resonates throughout the entire experience, inviting guests to savour not only exceptional cuisine but also the convivial spirit that defines Latin American dining.

Hosted at COPA, the vibrant Latin American restaurant located within 25hours Hotel Jakarta The Oddbird, the event promises an evening where food, culture, and storytelling come together around one table. The exclusive dining experience takes place from 6.00 pm to 10.00 pm on 17 and 18 July 2026, with Accor Plus members also enjoying a 15% dining privilege during the event.
